A recipe that makes a tempting luncheon or quick family supper is made with canned luncheon meat. Called a Top Hat Supper, it consists of slices of Spam or Treet topped by a “hat” of well-seasoned instant mashed potatoes.

Baked for a mere 15 minutes, a celery soup sauce is served over the top. “Because it has a salty flavor, a fruit salad or Jell-O mold and rolls go well with this,” Diane said. Top Hat Supper retro dinner recipe

Prep Time: 15 minutes
Cook Time: 15 minutes
Total Time: 30 minutes

Ingredients

  • 1 can Campbell's Cream of Celery Soup
  • 1/4 cup chopped onion
  • 1/4 cup chopped green pepper
  • 2 tablespoons butter or margarine
  • 1/2 cup milk
  • 4 servings instant mashed potatoes 
  • 1 can (12 ounces) luncheon meat, cut in 6 slices

Instructions

  1. In saucepan, cook onion, green pepper in butter; stir in soup, milk.
  2. Prepare potatoes as directed on package using 1/2 cup soup mixture for milk.
  3. Place luncheon meat on baking sheet; top with mounds of potatoes.
  4. Bake at 375 F for 15 minutes.
  5. Serve with hot soup sauce plus chopped parsley, if desired.
  6. Serve with green beans, romaine salad, orange chiffon cake for dessert.
