Jell-O Gelatin Rainbow Cake (Poke Cake) recipe

Ingredients

  • 2 baked 8 or 9-inch white cake layers cooled
  • 2 packages Jell-O brand gelatin, any 2 flavors 3 ounces packages
  • 2 cups boiling water
  • 1 8 oz. container Birds Eye Cool Whip non-dairy whipped topping, thawed

Instructions

  1. Place cake layers, top sides up, in 2 clean layer pans; prick each cake with utility fork at 1/2 inch intervals.
  2. Dissolve each flavor gelatin separately in 1 cup of the boiling water and carefully spoon each over one of the cake layers. Chill 3 to 4 hours.
  3. Dip one cake pan in warm water for 10 seconds; turn out onto serving plate. Top with 1 cup of the whipped topping. 
  4. Unmold second cake layer; place carefully on first layer. Frost top and sides with remaining whipped topping. 

  5. Chill. Garnish as desired.

Lemon-lime sheet cake

Ingredients

  • 1 package lemon cake mix
  • 1 package lime gelatin
  • 3/4 cup boiling water
  • 1/2 cup cold water
  • 1 package whipped topping
  • 1 package instant lemon pudding
  • 2 cups cold milk in a chilled bowl

Instructions

  1. Bake the cake according to directions on package. Use a 13-by-9-inch pan. Cool cake 20 minutes. Leave in pan.
  2. Poke holes 1 inch apart with a meat fork. Dissolve the gelatin in the boiling water and stir in cold water. Pour over the cake and refrigerate.
  3. Beat the lemon pudding, milk and whipped topping together until thick. Spread on chilled cake, and keep refrigerated until serving time.

Recipe notes/servings

Fresh fruit can be placed in the whipped topping to complement the flavor of the gelatin poured into the cake.
