Mince Parfait Pie

Ingredients

1 package Orange Jell-O
1-1/4 cups hot water
1 pint butter pecan, maple nut, or vanilla ice cream
1 cup moist mincemeat
1 baked 9-inch pie shell, cooled

Directions

Dissolve Jell-O in hot water in 2-quart saucepan. Add ice cream by spoonfuls, stirring until melted. Then chill until thickened but not set (15 to 25 minutes). Fold in mincemeat. Turn into pie shell. Chill until firm (25 to 35 minutes). Garnish with pink whipped cream, pastry cornucopias, and tiny colored candies.

Date-Nut Parfait Pie

Ingredients

1 package Orange Jell-O
1-1/4 cups hot water
1/4 teaspoon cinnamon
1 pint vanilla ice cream
1/2 cup (4 ounces) dates, diced
1/4 cup chopped nut meats
1 baked 9-inch pie shell, cooled

Directions

Dissolve Jell-O in hot water in 2-quart saucepan. Add cinnamon. Add ice cream by spoonfuls, stirring until melted. Then chill until thickened but not set (20 to 30 minutes). Fold in dates and nut meats. Turn into pie shell. Chill until firm (15 to 25 minutes). Garnish with whipped cream and maraschino cherry slices.

Flaky Pastry

Ingredients

1 cup sifted Pillsbury’s Best Enriched Flour
1/2 cup shortening
1/3 teaspoon salt
2 to 3 tablespoons cold milk

Directions

Sift the flour and salt together. Cut in I the shortening until particles are the 1 size of small peas. Sprinkle milk over mixture, tossing lightly with fork until dough is moist enough to hold together. Form into a ball. Roll out on floured board or on a pastry cloth to 11-inch circle for 9-inch pie or to 10-inch circle for 8-inch pie. Fit pastry loosely into pie pan. Gently pat out air pockets. Fold edge to form standing rim; flute. Prick crust with fork. Bake in hot oven (425 F) 10 to 12 minutes. Cool.
