Jell-O harvest ring salad recipe (1979)

Ingredients

2 packages (3 oz. each) or 1 package (6 oz.) JELL-O Brand Lemon Flavor Gelatin
1/2 teaspoon salt
2 cups boiling water
1-1/2 cups cold water
1 tablespoon vinegar
1/2 cup chopped green pepper
1/2 chopped celery
1/4 cup diced pimiento
2 tablespoon grated onion

Instructions

Dissolve gelatin and salt in boiling water. Add cold water and vinegar; chill until thickened. Fold in vegetables and pour into 4-cup mold. Chill until firm, about 3 hours. Unmold. Garnish with crisp salad greens, if desired. Makes 4 cups or 8 servings.

Bonus! Molded carrot-cucumber salad recipe

Prepare Harvest Ring as directed, substituting 3/4 cup each shredded carrot well-drained shredded cucumber for the green pepper and celery; omit pimiento and onion.
