Since they’re neon-bright and bursting with candy-sweet fruit flavor, if you’re looking for a fun treat to share with a crowd, it’s hard to go wrong with these colorful Fruity Pebbles Rice Krispie treats!
Whether you are making them for a birthday party, school event, potluck or just to have at home for a special treat, these dessert bars are a great choice because they’re so easy (use only a few ingredients), quick (you can whip a batch in 10 minutes), budget-friendly (affordable ingredients that are easy to find) and won’t heat up your kitchen (no oven required).
I needed to bring something sweet to a kids’ event, and wanted to make something a little different than my usual tasty standby — traditional Rice Krispie treats. These were fast and easy, and you can actually taste-test them as soon as they’re finished.
Rather than make these treats from only Fruity Pebbles, I decided to go for a layered version that still looked and tasted great, but used a standard Rice Krispies Treats recipe as the base, then added a layer of the colorful cereal on top. (As any shopper knows, name-brand kids’ cereals like Fruity Pebbles are bright and flavorful but not super-cheap. We needed to make three big batches, so this was an even more budget-friendly option than going full-Pebbles.)
In a large saucepan, melt 2 tablespoons of butter or margarine over low heat. Add 3 cups of marshmallows, and stir until they are completely melted and the mixture is smooth. Remove from heat.
Add the plain Rice Krispies cereal. Stir until the cereal is well-coated.
Using a buttered spatula, waxed paper or parchment paper, evenly press the mixture into 13x9x2-inch pan that has been lightly-buttered or coated with cooking spray.
Directions for the top layer (Fruity Pebbles)
In a large saucepan, melt 1 tablespoon of butter or margarine over low heat. Add 1-1/2 cups of marshmallows, and stir until they are completely melted and the mixture is smooth. Remove from heat.
Add 1-1/2 cups of colorful Fruity Pebbles cereal. (Reserve 1/4 cup to sprinkle on the top.) Stir until the cereal is well-coated.
Using a buttered spatula, waxed paper or parchment paper, evenly press the mixture on top of the pan of Rice Krispies treats.
Immediately sprinkle the remaining 1/4 cup of Fruity Pebbles over the top of the still-warm marshmallow/colored cereal mixture, and press them into the top by hand. (You want them to stick, but stay intact so the top looks nice.)
How to finish these Fruity Pebbles Rice Krispie treats
Cool for 2 hours. Then, using a sharp, lightly-buttered knife, cut them into 1-1/2-inch squares.
Store in a tightly-covered container for up to 3 days.
To melt the marshmallow mixture with a microwave instead of a saucepan: In a microwave-safe bowl, heat butter and marshmallows on high for 30-60 seconds, stir, then heat for 10-20 seconds more until they are all melted. (NOTE: Cooking times may vary because microwave ovens are not all the same -- check mixture often rather than risk burning it.) Stir until smooth.
Like them chewier? Crisper? The marshmallow/cereal ratios may be altered to suit your preference.
