Zesty baked beans recipe
Ingredients
2 1-lb cans Ann Page Beans (any style)
3 tbsps salad oil
1 medium onion, chopped
1/2 green pepper, chopped
1/4 tsp oregano
6 frankfurters
1/2 lb Ched-O-Bit cheese
Directions
Saute onions and green peppers in salad oil. Combine with beans and oregano and pour into baking dish. Slice frankfurters diagonally 1/2″ thick; slice cheese 1/4″ thick and arrange on beans around edge of casserole. Place overlapping frankfurters on top of cheese. Bake in a 350F oven for 30 minutes. Makes 6 servings.
Bonus recipe: Barbecue beans
A quickly-assembled barbecue sauce that offers taste interest and color, contrasting molasses with the nip of vinegar and mustard. It’s good for barbecue beans as well as for spareribs or other meats. All the ingredients are easily assembled from any supermarket.
Barbecue beans recipe
1/2 cup unsulfured molasses
2 tablespoons vinegar
2 tablespoons prepared mustard
4 cans baked beans
1 medium onion, sliced
Combine unsulphured molasses, vinegar and mustard; mix well. Empty beans into skillet or casserole: stir in molasses mixture. Arrange onion slices on top of beans or layer with beans. Simmer in skillet on top of range or outdoor grill 15 to 20 minutes, or bake in casserole in a hot oven. (400F) for 30 minutes.
Makes 8 to 10 servings
