A new way to make chicken salad (1955)

Classic pineapple chicken salad

Pineapple chicken salad

Yield: 6 servings
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes

Ingredients

  • 2 cups diced cooked chicken
  • 1 cup diced canned pineapple
  • 2/3 cup mayonnaise
  • 1/2 cup diced celery
  • 1/2 cup coarsely chopped salted almonds
  • 1/4 cup diced green pepper

Instructions

  1. Heat chicken and well-drained pineapple in a double boiler 20 to 25 minutes.
  2. Add Real Mayonnaise and mix lightly with a fork.
  3. Heat 5 minutes longer.
  4. Stir in celery and 1/3 cup almonds.
  5. Spoon into serving dish.
  6. Sprinkle with remaining almonds and green pepper.
  7. Garnish with watercress and spiced crab apples.
  8. For hot chicken salad: Serve at once.

Notes

For cold chicken salad, combine ingredients and chill for at least 2 hours. Add garnish before serving.
