For Valentine’s Day, Washington’s Birthday or any day, give them something made with love, like these deliciously indulgent rocky road bars and a sweetheart fudge pie!
Sweetheart fudge pie recipe
Ingredients
1/4 cup butter or margarine
3/4 cup brown sugar, packed
3 eggs
Two 6 oz packages (2 cups) semi-sweet chocolate chips
2 tsp instant coffee
1 tsp rum flavoring
1/4 cup all-purpose flour
1 cup coarsely chopped walnuts
9-inch unbaked pastry shell
1 cup whipping cream
2 tbsp chopped maraschino cherries
Directions
Cream butter with brown sugar; add eggs, one at a time, beating well. Melt chocolate over hot, not boiling, water; add to creamed mixture with coffee and rum flavoring. Stir in flour and walnuts. Pour into pie shell.
Bake at 375 degrees F 25 minutes. Cool. Whip cream stiff; fold in cherries. Spread on top of pie; decorate with chocolate or candy hearts.
Rocky road bar recipe
Ingredients
1/4 cup sifted all-purpose flour
1/4 tsp baking powder
1/8 tsp salt
1/3 cup brown sugar, packed
1 egg
1 tbsp softened butter
1/2 tsp vanilla
1 cup coarsely chopped Diamond Walnuts
1 cup quartered marshmallows
1 6 oz pkg (1 cup) semi-sweet real chocolate pieces
Directions
Sift flour with baking powder and salt. Add sugar, egg, butter and vanilla. Beat smooth. Stir in 1/2 cup walnuts. Turn into greased 9 inch square pan.
Bake at 350 F 15 min until top is lightly browned and springs back when touched lightly. Remove from oven. Immediately arrange marshmallows, remaining walnuts and chocolate over top.
Return pan to oven for 2 min or until chocolate is softened. Remove from oven; swirl chocolate over marshmallows and walnuts. Cool until chocolate is set. Cut into 15 (1-3/4 x 3 inch) bars.
