Here’s an easy and attractive appetizer recipe from the sixties for chicken ham pinwheels: a meaty oven-baked roll that you slice into pieces, sushi-style.

Chicken Ham Pinwheels recipe

Ingredients

2 chicken breasts, skinned and boned
1/8 teaspoon dried basil leaves, crushed
1/8 teaspoon salt
Dash pepper
Dash garlic salt
3 thin slices cooked ham
2 teaspoons lemon juice

Directions

Place chicken breasts skinned side down on board; pound to 1/4-inch thickness. Combine basil, salt, pepper, and garlic salt; sprinkle on chicken. Place 1-1/2 slices ham on each chicken breast to cover; roll up lengthwise with ham inside.

Place both rolls, seam side down, in a 10 x 6 x 1-1/2-inch baking dish. Drizzle with lemon juice; sprinkle with paprika. Bake in 350F oven for 35 to 40 minutes or till chicken is tender. Chill; cut into 1/4-inch slices.

Makes about 24 slices
