Pie… made of spaghetti? For dinner?

This spaghetti pie is the most delicious way we know to stretch one pound of ground beef into six servings.
First, create a “crust” out of cooked spaghetti noodles. Next, fill it in with ground beef, vegetables and sauce, then bake it for 20 minutes.

Spaghetti pie
Ingredients
- 6 ounces spaghetti
- 2 tablespoons butter
- 1/3 cup grated parmesan cheese
- 2 well beaten eggs
- 1 pound ground beef
- 1/2 cup finely chopped onion
- 1/4 cup finely chopped green pepper
- 8 ounces canned tomatoes, finely chopped
- 6 ounces tomato paste
- 1 teaspoon sugar
- 1 teaspoon dried oregano, crushed
- 3/4 teaspoon garlic salt
- 6 ounces mozzarella cheese slices
- 1/2 cup shredded mozzarella cheese
Instructions
- Cook spaghetti according to package directions; drain.
- Stir in butter.
- Add Parmesan cheese and eggs.
- Form spaghetti mixture into a crust shape in a buttered 10-inch shallow casserole.
- In skillet, cook ground beef, onion, and green pepper until vegetables are tender and meat is browned.
- Drain off excess fat.
- Stir in undrained tomatoes, tomato paste, sugar, oregano and garlic salt.
- Heat thoroughly.
- Layer mozzarella cheese slices over bottom of spaghetti crust.
- Fill pie with tomato mixture.
- Bake uncovered, in 350 (F) oven for 20 minutes.
- Sprinkle shredded mozzarella cheese on top in the center of pie.
- Bake 5 minutes longer to melt cheese.
