This retro pancake recipe comes from a 1962 ad for Aunt Jemima pancake mix, and the idea was simple: Let everyone choose their own add-ins. These “order-up” pancakes were made on the spot with whatever mix-ins people wanted — blueberries, bacon, bananas, chocolate chips, chopped nuts or even sliced hot dogs.

The instructions are about as basic as it gets: pour the batter, sprinkle or layer on the extras, flip, and serve. It’s easy to see why this became a fun weekend breakfast option in the early ’60s, especially with a griddle running and a hungry group to feed. Still works just as well now.

Now everybody can have his own favorite!

Just shake up a batch of Aunt Jemima batter and pour. While the first side is cooking, sprinkle on blueberries, crumbled cooked bacon, or maybe chopped pecans. Raisins or chocolate chips, too. Or… place slices of franks or bananas on griddle and pour batter over them; bake to a golden brown on each side.

Ingredients

  • Pancake mix (enough for desired number of servings)
  • Water, milk, or eggs as directed on pancake mix package
  • Blueberries
  • Sliced bananas
  • Crumbled cooked bacon
  • Chopped pecans or walnuts
  • Raisins
  • Chocolate chips
  • Thin slices of cooked hot dogs or breakfast sausage

Instructions

    1. Prepare pancake batter according to package instructions.
    2. Heat a lightly greased griddle or skillet over medium heat.
    3. Pour batter onto the griddle to form pancakes.
    4. While the first side cooks, sprinkle or layer your choice of add-ins directly onto each pancake.
    5. When bubbles appear on the surface and edges start to set, flip and cook until golden brown on the other side.
    6. Serve hot with butter, syrup, or any toppings you like.

Notes

For sliced fruit or meats, you can also place them on the griddle first, then pour the batter over the top before flipping.
