This pecan-pie-style breakfast treat uses a quick yeast-based dough, and some crushed bran cereal gives the crust a nice texture. The sweetness comes from a combination of brown sugar and maple syrup.

Ingredients

  • 1/2 cup whole bran cereal, coarsely crushed
  • 1/4 cup granulated sugar
  • 1 package active dry yeast
  • 1/2 cup warm water (110 F to 115 F)
  • 1 egg
  • 1-1/2 cups all-purpose flour
  • 1 tablespoon cooking oil
  • 1 cup chopped pecans
  • 1/3 cup packed brown sugar
  • 1/4 cup maple-flavored syrup
  • 2 tablespoons butter or margarine
  • 1 teaspoon ground cinnamon

Instructions

  1. Combine cereal, granulated sugar, and yeast. Stir in water. Let stand 5 minutes.
  2. Add egg, 1/2 cup of the flour, the oil, and 2 teaspoon salt. Beat at low speed of mixer till blended.
  3. Beat at high speed 3 minutes, scraping bowl.
  4. By hand, stir in remaining flour. Knead 1 minute.
  5. Place in greased bowl. Cover; let rise till double (about 1 hour).
  6. In a saucepan, combine pecans, brown sugar, syrup, butter or margarine, and cinnamon.
  7. Cook and stir over low heat just till sugar dissolves. Do not boil. Set aside.
  8. Punch dough down.
  9. With floured hands, press dough into a greased 12-inch round pizza pan or two greased 9-inch round cake pans, forming a high edge.
  10. Crimp edge; spread pecan mixture to within 1 inch of edge.
  11. Bake at 400 (F) about 20 minutes. (If using a 12-inch pizza pan, place pan on a baking sheet to bake.)
  12. Cool before serving.
