Butterscotch cheesecake bars – retro recipe from the ’80s
For great snackin’, here’s something lip-smackin’ good. It’s a snap to make these simply scrumptious butterscotch cheesecake bars.
It’s so simple with Eagle Brand Sweetened Condensed Milk — the Dessert Maker. But you’d better make an extra batch because these butterscotch squares are so special, they won’t stay around for long.
Butterscotch cheesecake bars
Ingredients
- 12 ounces butterscotch morsels
- 3 cups margarine or butter
- 2 cups graham cracker crumbs
- 1 cup chopped nuts
- 8 ounces package cream cheese, softened
- 14 ounces Eagle Brand sweetened condensed milk (NOT evaporated milk)
- 1 teaspoon vanilla extract
- 1 egg
Instructions
- Preheat oven to 350 (F) (325 (F) for glass dish).
- In medium saucepan, melt morsels and margarine; stir in crumbs and nuts.
- Press half the mixture firmly onto bottom of greased 13- by 9-inch baking pan.
- In large mixer bowl, beat cheese until fluffy; beat in Eagle Brand, vanilla and egg.
- Mix well.
- Pour into prepared pan; top with remaining crumb mixture.
- Bake 25 to 30 minutes or until toothpick inserted near center comes out clean.
- Cool to room temperature; chill before cutting into bars.
- Refrigerate leftovers.
