Butterscotch cheesecake bars – retro recipe from the ’80s

For great snackin’, here’s something lip-smackin’ good. It’s a snap to make these simply scrumptious butterscotch cheesecake bars.

It’s so simple with Eagle Brand Sweetened Condensed Milk — the Dessert Maker. But you’d better make an extra batch because these butterscotch squares are so special, they won’t stay around for long.

Total Time: 50 minutes

Ingredients

  • 12 ounces butterscotch morsels
  • 3 cups margarine or butter
  • 2 cups graham cracker crumbs
  • 1 cup chopped nuts
  • 8 ounces package cream cheese, softened
  • 14 ounces Eagle Brand sweetened condensed milk (NOT evaporated milk)
  • 1 teaspoon vanilla extract
  • 1 egg

Instructions

  1. Preheat oven to 350 (F) (325 (F) for glass dish).
  2. In medium saucepan, melt morsels and margarine; stir in crumbs and nuts.
  3. Press half the mixture firmly onto bottom of greased 13- by 9-inch baking pan.
  4. In large mixer bowl, beat cheese until fluffy; beat in Eagle Brand, vanilla and egg.
  5. Mix well.
  6. Pour into prepared pan; top with remaining crumb mixture.
  7. Bake 25 to 30 minutes or until toothpick inserted near center comes out clean.
  8. Cool to room temperature; chill before cutting into bars.
  9. Refrigerate leftovers.
