Lemon-orange rainbow poke cake
Ingredients
- 1 package (2-layer size) lemon cake mix or pudding-included cake mix
- 3 ounces (1 package) Jell-O orange flavor gelatin
- 1 cup boiling water
- 1/2 cup orange juice or cold water
Instructions
- Prepare cake mix as directed on the package, baking in a greased and floured 13- by 9-inch pan at 350 (F) for 35 to 40 minutes.
- Cool cake in pan for 15 minutes; then prick with a utility fork at 1/2-inch intervals.
- Meanwhile, dissolve gelatin in boiling water.
- Add orange juice and pour carefully over the warm cake.
- Chill for at least 2 hours. Garnish as desired.
