Lemon-orange rainbow poke cake (1980)

You’ll find a smile at the end of the rainbow. A Jell-O gelatin Rainbow Cake is incredibly moist and fruity tasting.

This retro lemon-orange rainbow poke cake recipe gets an extra boost of flavor from swapping out the half cup of cold water for orange juice — plus some citrus flavor from the cake mix itself.

To make this delicious poke cake the way it looks here, you can frost with sweetened whipped cream or some version of a simple white frosting, then decorate each slice with a canned mandarin orange segment.
