Impossible cherry pie: A retro recipe from the ’80s

The pie that’s impossibly easy because it makes its own crust. And it’s filled with the harvest-fresh goodness of Comstock cherry pie filling.

Ingredients

  • 2 tablespoons firm margarine or butter
  • 1/2 cup Bisquick baking mix
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 cup milk
  • 2 tablespoons margarine or butter, softened
  • 1/4 teaspoon almond extract
  • 2 eggs
  • 1/2 cup Bisquick baking mix
  • 1/4 cup sugar
  • 21 ounces Comstock cherry pie filling

Instructions

  1. Begin by making the streusel; Cut the 2 tablespoons firm margarine or butter into 1/2 cup Bisquick baking mix, brown sugar and ground cinnamon until crumbly.
  2. For the pie, being by heating the oven to 400 (F).
  3. Grease pie plate, 10- by 1-1/2-inches.
  4. Beat all ingredients except cherry pie filling and streusel until smooth, for 15 seconds in blender on high or 1 minute with hand beater.
  5. Pour into plate.
  6. Spoon pie filling evenly over top.
  7. Bake 25 minutes.
  8. Top with streusel.
  9. Bake until streusel is brown, about 10 minutes longer.
  10. Cool; refrigerate any remaining pie.

Notes

High Altitude: Increase second bake time to 15 to 20 minutes.
