How to make a beautiful classic strawberry torte: A recipe from the ’60s

Despite its elaborate appearance, this torte is simple enough that even a child, with a little help, can prepare it. The cake may be baked, and with the help of big sis or father, the two layers may be split into four. Then it’s merely whipping cream and slicing strawberries for the filling and the topping.

Classic strawberry torte recipe

Prep Time: 40 minutes
Cook Time: 45 minutes
Total Time: 1 hour 25 minutes

Ingredients

  • 1-1/2 sticks (3/4 cup) margarine
  • 1-1/2 cups sugar
  • 3 eggs, separated
  • 2-1/4 cups sifted cake flour
  • 3 teaspoons baking powder
  • 1 teaspoon mace
  • 3/4 cup milk
  • 1-1/2 pints whipping cream
  • 1/2 cup sugar
  • 1 quart fresh strawberries

Instructions

  1. Cream margarine.
  2. Add sugar gradually and continue creaming until light and fluffy.
  3. Add egg yolks.
  4. Beat well.
  5. Sift flour, baking powder, and mace together and add alternately with the milk.
  6. Beat egg whites until stiff and fold into batter.
  7. Rub bottom of two 9-inch cake pans with margarine and line with waxed paper.
  8. Pour batter into pans.
  9. Bake in a moderate oven (350 F) 40 to 45 minutes.
  10. Cool and remove from pans.
  11. Split each layer.
  12. Wash and drain strawberries.
  13. Slice berries in half lengthwise, reserving 6 to 8 whole berries for garnish.
  14. Whip cream and blend in sugar.
  15. Reserve 1/4 of the whipped cream for topping.
  16. Fold sliced berries into remaining whipped cream.
  17. Stack layers, spreading whipped cream with berries between.
  18. Spread reserved whipped cream over the top and garnish with whole strawberries. Refrigerate until serving time.
