Nilla wafer cranberry cheesecake (1994)
Ingredients
- 50 Nilla Wafers (vanilla wafers)
- 1-2/3 cup sugar
- 3 tablespoons margarine, melted
- 24 ounces cream cheese, softened
- 3 eggs
- 1/2 cup sour cream
- 1/4 cup orange juice
- 1 tablespoon grated orange peel
- 2 cups cranberries
- 3/4 cup sugar
- 2 tablespoons water
- 1 tablespoon cornstarch
Instructions
- Finely roll 25 Nilla wafers.
- Mix crumbs, 5 tablespoons of sugar and margarine; press on bottom of 9-inch springform pan.
- Stand remaining wafers around side of pan, overlapping slightly.
- With mixer, beat cream cheese and the remaining sugar; blend in eggs, sour cream, orange juice and peel.
- Spread into crust.
- Bake at 350 F for 1 hour or until set.
- Turn oven off; open door slightly.
- Let cheesecake stand in oven for 1 hour.
- Remove from oven; cool.
- Chill at least 4 hours.
- While the cake cools, make the cranberry topping: In a saucepan, cook cranberries, 3/4 cup sugar, water and cornstarch over medium heat, stirring until mixture thickens.
- Chill.
- Serve cake topped with cranberry topping. Garnish as desired.
