Here's an '80s version of the classic guacamole dip

Ingredients

  • 2 ripe California avocados, peeled and diced
  • 1-1/2 tablespoon lemon juice, preferably fresh
  • 1-2 cloves garlic, minced
  • 1 teaspoon dried leaf basil, crushed
  • 1/4 cup red pepper, finely diced
  • 2 tablespoons of your favorite salsa
  • 1-1/2 tablespoons slivered almonds, coarsely chopped
  • 1 tablespoon thinly sliced green onion
  • Dollop sour cream garnish
  • 2 teaspoon salt (optional)
  • 1 tablespoon minced cilantro (optional)

Instructions

  1. Peel and mash 1 avocado, mix with lemon juice, cilantro, garlic, basil, and salt.
  2. Dice remaining avocado, fold into mixture with red pepper, salsa, green onion, and chopped almonds.
  3. Garnish with sour cream.
  4. Serve with tortilla chips and fresh vegetables.
