Jell-O no-bake pudding cheesecake

Total Time: 2 hours 15 minutes

Ingredients

  • 1-1/4 cups fine graham cracker crumbs
  • 1/4 cup sugar
  • 6 tablespoons butter or margarine, melted
  • 1-1/2 cups cream cheese, softened (12 ounces)
  • 2 cups cold milk
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla
  • 1 package (3-3/4 oz.) Jell-O Lemon or Vanilla Instant Pudding & Pie Filling

Instructions

  1. Combine crumbs, 1/4 cup sugar, and butter; press firmly on bottom and sides of 8-inch square or 9-inch pie pan. Chill while preparing filling.
  2. Beat cream cheese until very soft. Blend in 1/2 cup milk. Add remaining milk, 2 tablespoons sugar, the vanilla, and pie filling mix; beat as directed on package for pie.
  3. Pour into crust. Chill until firm at least 2 hours; garnish with dollops of prepared whipped topping and strawberries, or 1 cup cherry or pineapple pie filling.
  4. For ease in serving, dip pie pan in warm water for a few seconds; cut and serve.

Notes

For crumb garnish, reserve 2 tablespoons crumb mixture.

  1. This turned out really great. We served it with a homemade berry syrup and fresh strawberries. I used French Vanilla as that is what I had. We will try it again with chocolate.

  2. i want to make an eggnog no bake cheese cake, using the jello cheesecake pudding mix. can i sub the 2 c. of milk with 2 c. eggnog?

    1. No, it would be too sweet since the eggnog already contains a lot of sugar. You could make your own eggnog base, by following an eggnog recipe and leaving out the sugar and use that in place of the milk.

      Or you could add 1/4 teaspoon nutmeg, a dash of cinnamon and 2 teaspoons rum to create an eggnog flavor.
