Holiday Chip Cake recipe


2 cups mixed candied fruits and peels
2 cups raisins
1-1/2 cups chopped pecans
1 cup semisweet chocolate pieces
4 tablespoons butter or margarine
1 cup sugar
3 eggs
1/4 cup applesauce
1-1/2 cups sifted all-purpose flour
1/4 teaspoon each baking soda, ground allspice, ground cinnamon, and instant coffee powder


Lightly oil a 7-cup ring mold. Line with heavy brown paper; oil again. Combine fruit, nuts, and chocolate pieces. Cream butter or margarine and sugar till fluffy. Add eggs one at a time, beating well after each. Stir in 1/4 cup water and the applesauce. Sift together dry ingredients; stir into sugar mixture. Fold in fruit; spoon into pan. Bake in 275 F oven about 23/4 hours. Cool; remove from pan. Wrap; store in cool place. – Mrs A Nazzaro, Newfoundland, NJ
