Banana rum pie: A retro recipe from the ’60s
A real year-rounder, this banana rum pie, since you make it with vanilla pudding mix, fluffy white frosting mix, and those beautiful bananas that know no season.
Add chopped pecans to the crust for crunch and flavor, drizzle chocolate over the diagonally sliced bananas on top, and you have a spring spectacular! And one, by the way, that you can make ahead.
Banana rum pie
Ingredients
- 3-1/4 ounce vanilla pudding mix
- 1 tablespoon unflavored gelatin
- 2-1/4 cups milk
- 1 package fluffy white frosting mix
- 1-1/2 teaspoons rum flavoring
- Dash salt
- Dash nutmeg
- 3 bananas
- 9-inch baked pecan pastry shell
- 1 ounce semisweet chocolate
- 1 tablespoon butter or margarine
Instructions
- To make pecan pastry shell: prepare pastry for a 9-inch pie, adding 3 tablespoons finely chopped pecans to flour mixture before adding the water.
- Now do the filling; in a medium saucepan, combine pudding mix and gelatin.
- Cook according to directions on pudding package, using the 2-1/4 cups milk.
- Remove from heat; cover with waxed paper; set aside.
- Prepare frosting mix according to package directions.
- Stir in rum or rum flavoring, salt, and nutmeg.
- Fold hot pudding into frosting.
- Slice one banana into pastry shell; cover with half the filling.
- Repeat with second banana and remaining filling.
- Chill 3 to 4 hours.
- Diagonally slice remaining banana; arrange on pie.
- Melt together chocolate and butter or margarine; mix well.
- Drizzle chocolate over banana slices on pie.
