Turkey with Stuffing Croquettes


2-pound, 8-ounce frozen boneless turkey roast
3 slices bacon
1/2 cup finely chopped celery
1/4 cup finely chopped onion
1 beaten egg
1/4 cup chicken broth
1 tablespoon snipped parsley
1/4 teaspoon poultry seasoning
1/4 teaspoon rubbed sage
6 cups bread cubes (9 slices bread)


Roast turkey on rack in 13x9x2-inch baking pan according to package directions. Cook bacon till crisp; crumble and set aside. Cook celery and onion in drip-pings. Combine egg, broth, parsley, seasonings, bacon, and vegetables. Add bread crumbs; toss to mix. Using 1/2 cup mixture for each, form stuffing into balls. About 20 minutes before turkey is done, arrange Stuffing Croquettes on rack; continue baking 20 minutes. Makes 6 servings.
