Summer treats that treat sensitive digestions lightly
There’s no reason why a person with an ulcer, an allergy or a digestive problem can’t enjoy tempting, satisfying dishes in every season.
Pineapple ring with fruit (for egg-free diets)
3 cups pineapple juice
1/4 cup sugar
1/2 teaspoon salt
3/4 cup Cream of Rice
Combine juice, sugar, salt; bring to a boil. Sprinkle in Cream of Rice and cook, stirring constantly, for 30 seconds. Remove from heat, cover and let stand 3 minutes. Stir well and pour into a lightly-oiled 1-quart ring mold. Chill until firm, at least 8 hours. Unmold on platter and fill center with fruit such as strawberries, rhubarb or fruit cocktail. Makes 6 servings
“Surprice” milkshake (for bland diets)
1/2 cup cold, cooked Cream of Rice
1 tablespoon sugar
3/4 cup cold milk
1/4 to 1/2 teaspoon vanilla
In blender, combine cold, cooked Cream of Rice, milk, sugar and vanilla. Blend at top speed until smooth, about 30 seconds. Makes 1 serving.
