Honey spice cake recipe

Frostings and cakes made with honey are moister and retain this moisture longer than do cakes and cake icings made without it. Here is an excellent recipe for a honey spice cake, and for a honey frosting that accompanies it.


  • 3/4 cup shortening
  • 1/2 cup granulated sugar
  • 1/4 cup strained honey
  • 2 eggs
  • 3 cups cake flour
  • 1 teaspoons baking powder
  • 1/2 teaspoon soda
  • 1/2 teaspoon salt
  • 1-1/2 teaspoons cinnamon
  • 1/2 teaspoon cloves
  • 1/2 teaspoon nutmeg
  • 1/2 cup nut meats (broken)
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract


  1. Cream shortening. Add sugar and beat thoroughly.
  2. Add honey.
  3. Separate eggs; beat yolks and dd to the mixture.
  4. Mix and sift all dry ingredients.
  5. Add 1/4 cup of dry ingredients to nuts and add to the cake mixture.
  6. Add remaining dry ingredients alternately with buttermilk and vanilla, beating between each addition.
  7. Beat egg whites until stiff. Fold into mixture.
  8. Place in well-greased loaf pan. Bake in moderate oven (350 degrees) for 45-50 minutes.
Honey boiled icing

1/3 cup strained honey
1/2 cup water
2-1/2 cups sugar
1/4 teaspoon salt
2 egg whites

Place honey, water, sugar and salt in saucepan and cook, stirring occasionally, until hard ball stage. Remove from flame and beat egg whites until stuff. Pour syrup mixture over beaten egg whites and beat with rotary beater until thoroughly blended. Then beat with a spoon until icing will hold its shape. Spread on cake with a swirling motion.
