Vintage cookie recipes: Spiced crackle cookies – Nice ‘n spicy

Ingredients

2-1/2 cups unsifted flour
1 cup Kellogg’s 40% Bran Flakes cereal
2 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1/2 cups sugar
1/2 cup Best Foods Real Mayonnaise
2 eggs
2 tsp vanilla
1/4 cup (about) confectioners sugar

Directions

In bowl, stir together flour, cereal and next 5 ingredients. In large bowl with mixer at high speed, beat sugar, mayonnaise, eggs and vanilla 2 minutes, or until blended.

With wooden spoon, stir in cereal mixture. Cover; chill 1 hour. With greased hands, shape dough by level tablespoonfuls into 1-1/2″ balls. Roll in confectioners sugar.

Place 2″ apart on greased cookie sheets. Bake in 350 F oven 12 to 15 minutes, or until lightly browned. Cool. Makes about 4 dozen cookies.

2 cups Kellogg’s 40% Bran Flakes cereal, crushed to measure 3/4 cup
2-3/4 cups unsifted flour
2 cups chopped nuts, divided
1/2 tsp baking soda
1 cup firmly packed light brown sugar
3/4 cup Best Foods Real Mayonnaise
2 eggs
1 tsp vanilla
Jam or jelly

Directions

In bowl, stir together crushed cereal, flour, 1 cup nuts and baking soda. In large bowl with mixer at medium speed beat together sugar, mayonnaise, eggs and vanilla 3 minutes or until mixture is smooth and well blended.

With wooden spoon, stir in cereal mixture. Cover; chill 1 hour. Shape dough by level tablespoonfuls into 1-1/2″ balls. Roll in remaining 1 cup nuts.

Place 2″ apart on greased cookie sheets. Make indentation with wooden spoon handle in center of each cookie. Bake in 375 F oven 12 to 15 minutes, or until bottoms are lightly brown.

While still warm, press thumb into centers. Cool. Fill indentations with jam or jelly. Makes about 4 dozen cookies.
