Coconut Sugar Cookies

A thin, crisp cookie that you form with a cookie cutter.

Ingredients

1961-coconut-sugar-holiday-cookie-recipe2/3 cup butter or margarine
2/3 cup sugar
2 eggs
1 teaspoon vanilla extract
2 cups sifted flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup flaked coconut, chopped
Colored Vanilla Frosting

Directions

Cream butter and sugar. Beat in eggs, one at a time; add vanilla. Sift flour with baking powder and salt and stir in gradually, blending thoroughly. Add coconut. Chill until firm enough to roll.

Roll out dough to 1/8″ thickness on floured board. Cut with floured bell or other cookie cutter. Bake on ungreased cookie sheet in moderate oven (375 F) 12 minutes, or until golden brown.

Cool and decorate with Vanilla Frosting, tinted as desired with food coloring.

Colored Vanilla Frosting

Beat until smooth: 1-1/2 cups sifted confectioners’ sugar, 2 tablespoons cream and 1-1/2 teaspoons vanilla extract. To color, add a few drops of vegetable food coloring.

Makes about 4 dozen 1-1/2″ cookies
